Ingredients
- 2 pounds sweet potatoes
- 3 medium bananas (1 1/4 pounds)
- 1/8 cup orange juice
- 1/4 cup brown sugar, firmly packed, divided
- 1/4 teaspoon ground cinnamon
- 1 dash salt
- 1/8 cup butter, divided
How To Make tropical sweet potato casserole

Step 1Cook the sweet potatoes in boiling water to cover, 30 to 35 minutes or until tender; drain. Let cool slightly. Peel and cut cross-wise into 1/4-inch slices. Set aside.

Step 2Slice the bananas into 1/4-inch slices.

Step 3Combine the orange juice, half the brown sugar, cinnamon, and salt in a medium to large bowl. Stir well. Add the banana slices, tossing gently to coat.

Step 4Arrange 1/3 of the sweet potato slices in a lightly greased 1 1/2-quart casserole; top with half of the banana slices. Sprinkle with 1/2 tablespoon brown sugar; dot with 1 tablespoon butter. Repeat the layers, ending with sweet potato slices. Sprinkle the top with the remaining tablespoon of brown sugar and dot with the remaining tablespoon of butter.

Step 5Bake at 375 degrees F for 45 minutes or until hot and bubbly.
