Ingredients

  • 2 pounds sweet potatoes
  • 3 medium bananas (1 1/4 pounds)
  • 1/8 cup orange juice
  • 1/4 cup brown sugar, firmly packed, divided
  • 1/4 teaspoon ground cinnamon
  • 1 dash salt
  • 1/8 cup butter, divided

How To Make tropical sweet potato casserole

  • Step 1
    Cook the sweet potatoes in boiling water to cover, 30 to 35 minutes or until tender; drain. Let cool slightly. Peel and cut cross-wise into 1/4-inch slices. Set aside.
  • Step 2
    Slice the bananas into 1/4-inch slices.
  • Step 3
    Combine the orange juice, half the brown sugar, cinnamon, and salt in a medium to large bowl. Stir well. Add the banana slices, tossing gently to coat.
  • Step 4
    Arrange 1/3 of the sweet potato slices in a lightly greased 1 1/2-quart casserole; top with half of the banana slices. Sprinkle with 1/2 tablespoon brown sugar; dot with 1 tablespoon butter. Repeat the layers, ending with sweet potato slices. Sprinkle the top with the remaining tablespoon of brown sugar and dot with the remaining tablespoon of butter.
  • Step 5
    Bake at 375 degrees F for 45 minutes or until hot and bubbly.
