Ingredients For the lone ranger casserole

  • 1 1/2 lb
    ground beef
  • 1 pkg
    taco seasoning mix, reduced sodium
  • 1 c
    water
  • 1 c
    salsa, heat of your choice
  • 8 oz
    corn kernels, frozen, thawed
  • 1 can
    black beans, drained & rinsed
  • 32 oz
    mexican blend shredded cheese
  • 1 - 30 oz bag
    tater tots, thawed

How To Make the lone ranger casserole

  • 1
    Preheat oven to 425 degrees F. Brown & drain your ground beef. Stir in the taco seasoning, water & salsa. Add the corn & black beans & cook until hot & bubbly.

    Place meat/corn/bean mixture in the bottom of a 9" x 13" pan. Sprinkle 2 C cheese over the meat. Place tater tots ontop of the cheese. Bake 30 minutes.

    Sprinkle the remaining 2 C cheese over the tots & broil until cheese is melted & getting a bit brown. Tater tots should be nice & crispy by then.
