Ingredients
- 6 large idaho potatoes (12 - 15 oz each), peeled
- 2 teaspoons white vinegar
- 2 1/4 quarts peanut oil

How To Make the best fries

Step 1Cut potatoes in lengths less than 1/2" square using a knife; place in large bowl with cold water. Add vinegar; stir potatoes. Refrigerate 1 hour. Stir potatoes again; drain water. Spread potatoes on paper towels; pat dry with more towels.

Step 2Line baking sheet with paper towels. In large heavy pot or deep fryer, preheat oil to 315 degrees F. In small batches, about 2 cups each, add potatoes to hot oil. Cook 5 - 7 minutes until just tender but not brown. Remove potatoes from oil; shaking off excess oil. Spread on baking sheet to drain. Refrigerate 1 hour, uncovered. NOTE: At this point you can freeze them up to 1 month in a sealed recloseable freezer bag.

Step 3When ready to serve...reheat oil to 375 degrees F. Fry potato slices 4 minutes until crispy & golden. (If frozen...allow to thaw before frying). Remove from fryer, shaking excess oil off. Spread on paper towels, allowing fries to stand 1 minute before salting.

Step 4BEACH FRIES: Sprinkle old bay seasoning on fries instead of salt. Serve in paper cup & douse liberally with apple cider vinegar.
