I'm a leftover queen! I hate to throw things away and be wasteful. This is a really quick and tasty way to use up those leftover mashed potatoes!

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 - egg
  • 1/4 cup flour
  • 2 teaspoons grated onion, optional
  • 1/4 cup canola oil (or oil of your choice)
  • - salt and pepper

How To Make tater cakes

  • Step 1
    Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.
