My Grandma and Mom fixed these when I was growing up, and we loved them. I make them for my kids and grand-kids. No matter how many I make, there are never left overs. Hope you enjoy.

Ingredients

  • 2 cups mashed potatoes, leftover are great
  • 1 dash salt, pepper and garlic (to taste)
  • 2 - eggs
  • 1 cup flour, or more as needed
  • - cooking oil

How To Make tater cakes

  • Step 1
    Season the potatoes with the salt, pepper,and garlic and mix well.
  • Step 2
    Beat the eggs and add to the potatoes. Be sure to mix very well.
  • Step 3
    Begin adding the flour, mixing well. Add enough flour to make the batter very stiff.
  • Step 4
    Heat enough oil in a skillet to cover the bottom. Spoon the potatoes into the oil, carefully spreading them into cakes. Fry until golden brown.
