My Grandma and Mom fixed these when I was growing up, and we loved them. I make them for my kids and grand-kids. No matter how many I make, there are never left overs. Hope you enjoy.

Ingredients
- 2 cups mashed potatoes, leftover are great
- 1 dash salt, pepper and garlic (to taste)
- 2 - eggs
- 1 cup flour, or more as needed
- - cooking oil
How To Make tater cakes

Step 1Season the potatoes with the salt, pepper,and garlic and mix well.

Step 2Beat the eggs and add to the potatoes. Be sure to mix very well.

Step 3Begin adding the flour, mixing well. Add enough flour to make the batter very stiff.

Step 4Heat enough oil in a skillet to cover the bottom. Spoon the potatoes into the oil, carefully spreading them into cakes. Fry until golden brown.
