Mom made these with leftover mashed potatoes. So this recipe is by memory.

Ingredients

  • 1 - egg
  • 2 tablespoons four
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon grated onion
  • 2 cups leftover mashed potatoes,fresh is best, not instant
  • 1/2 teaspoon baking powder

How To Make tater cakes

  • Step 1
    Beat egg, add flour,baking powder,salt and pepper and onion into large bowl. Stir the mashed potatoes into this mixture.
  • Step 2
    Drop big spoonfuls(however big you want them) onto hot skillet, with about 3-4 tablespoons melted butter, margarine or oil. Brown on both sides. Sometimes I serve them with a small dollop of sour cream and a sprinkle of chopped green onions.
