Ingredients
- 1 - egg
- 2 tablespoons four
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon grated onion
- 2 cups leftover mashed potatoes,fresh is best, not instant
- 1/2 teaspoon baking powder
How To Make tater cakes

Step 1Beat egg, add flour,baking powder,salt and pepper and onion into large bowl. Stir the mashed potatoes into this mixture.

Step 2Drop big spoonfuls(however big you want them) onto hot skillet, with about 3-4 tablespoons melted butter, margarine or oil. Brown on both sides. Sometimes I serve them with a small dollop of sour cream and a sprinkle of chopped green onions.
