sweet potatoes with marshmallow topping
I am designated by my family to bring this every Thanksgiving, Christmas and Easter. I love to see their faces and hear all the oou's and ahh's when they take their first bite. There is no need for sweet potato pie because this is more like a dessert than a vegetable side.

Ingredients
- 6-8 large sweet potatoes
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1/2 cup milk or cream
- 1 cup sugar
- 1/2 cup brown sugar
- TOPPING:
- 1 cup brown sugar
- 1 package miniature marshmallows
How To Make sweet potatoes with marshmallow topping

Step 1Preheat oven to 400F. Peel sweet potatoes and cut into chunks. Boil potatoes until softened then drain.

Step 2Add 1/2 cup butter, 1 cup sugar, 1/2 cup brown sugar, 1 tsp vanilla and milk. Beat with mixer until blended. Put mixture in a buttered casserole or baking dish. Set aside.

Step 3Make Topping: 1 cup of brown sugar. Sprinkle this on top of the sweet potatoes. Bake for 20 minutes.

Step 4Add marshmallows and bake an additional 5-10 minutes until tops are lightly toasted.
