Sweet Potatoes with Marshmallow Topping

6-8 largesweet potatoes

1/2 cbutter

1 tspvanilla extract

1/2 cmilk or cream

1 csugar
-
1/2 cbrown sugar

TOPPING:
-
1 cbrown sugar

1 pkgminiature marshmallows
How to Make Sweet Potatoes with Marshmallow Topping
- Preheat oven to 400F. Peel sweet potatoes and cut into chunks. Boil potatoes until softened then drain.
- Add 1/2 cup butter, 1 cup sugar, 1/2 cup brown sugar, 1 tsp vanilla and milk. Beat with mixer until blended. Put mixture in a buttered casserole or baking dish. Set aside.
- Make Topping: 1 cup of brown sugar. Sprinkle this on top of the sweet potatoes. Bake for 20 minutes.
