I got this recipe from my husband's grandmother. Great with turkey or ham.

Ingredients

  • CASSEROLE
  • 3 cups sweet potatoes, mashed (peeled and cooked)
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1/2 stick butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • TOPPING:
  • 1 cup coconut, (bagged already cut)
  • 1 cup brown sugar, light
  • 1/3 cup self rising flour
  • 1 cup chopped pecans
  • 1/2 stick butter

How To Make sweet potatoe casserole

  • Step 1
    Preheat oven to 300.
  • Step 2
    Drain boiled potatoes, place in bowl, add all the casserole ingredients to the potatoes,then mash all ingredients together that way the flavors blend together beautifully. Place in a lightly greased 13 inch x 9 inch pan. Make sure the mixture is kind of even.
  • Step 3
    Mix together the topping mixture, pour onto of the casserole evenly. Bake at 300 for 35 mins. Top should be a golden brown color, Don't over cook.
  • Step 4
    Cool for about 10 mins, then enjoy.
