This is a delightful recipe that makes a great presentation. Easy to make and great to eat. This recipe was found in an insert from a local grocery. It was included in their "Ultimate tailgate party planner" section. Enjoy! (I'm going to try this under a broiler next time. Will post pictures then.) Enjoy!

Ingredients

  • 3 - large sweet potatoes, peeled & cut into 3/4 inch thick slices
  • 2 tablespoons canola oil
  • 1 teaspoon mesquite seasoning
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup pecans, chooped
  • 1/4 - cooked bacon pieces
  • 2 teaspoons white balsamic glaze

How To Make sweet potato stacks-connie's

  • Step 1
    Preheat grill.
  • Step 2
    Combine potatoes, oil and seasonings until evenly coated.
  • Step 3
    Place slices on grill.
  • Step 4
    Grill 4-5 minutes on each side or until tender and golden.
  • Step 5
    Place potatoes on a serving dish.
  • Step 6
    Combine remaining ingredients. Top potatoes with this mixture.
  • Step 7
    Drizzle with more glaze, if desired.
  • Step 8
    Enjoy!
