    cup sugar

    teaspoons vanilla

    teaspoon orange extract
  • 1
    teaspoon orange zest
  • 4
    large eggs
  • 1
    cup 2% milk
  • 1
    teaspoon salt
  • 1
    teaspoon pepper
  • 1/2
    teaspoon nutmeg

    cup flour
  • 1
    cup butter
  • 1
    cup brown sugar
  • 1/2
    cup sweetened coconut
  • 1
    cup chopped pecans

How to Make BONNIE'S SWEET POTATO SOUFFLE

Step-by-Step

  1. Butter a 13X9 inch baking dish.
  2. Bake the sweet potatoes on a cookie sheet on foil. Pierce the skins with a fork at least three times. Bake at 400 for about one hour.
  3. Cool for 10 minutes, then using a fork scrape the skin off the potatoes, cut them into chunks and put them in a large mixing bowl.
  4. Add the butter, sugar, vanilla, orange extract, orange zest, the eggs, beaten, milk, salt, pepper and the nutmeg to the sweet potatoes. Mix well with a hand mixer on low speed, then beat on high speed until well mixed. Pour the mixture into the baking dish.
  5. Pre-heat the oven to 350 degrees.
  6. MAKE TOPPING:
    Melt the butter and add the flour, brown sugar, coconut and pecans, mix well. It will be crumbly.
  7. Sprinkle the topping over the sweet potato mixture and bake at 350 degrees for 35 minutes.
  8. Serve warm and Enjoy!
