bonnie's sweet potato souffle

Ingredients
- - souffle:
- 6 - sweet potatoes
- 6 - ounces butter
- 1/2 - cup sugar
- 2 - teaspoons vanilla
- 1 - teaspoon orange extract
- 1 - teaspoon orange zest
- 4 - large eggs
- 1 - cup 2% milk
- 1 - teaspoon salt
- 1 - teaspoon pepper
- 1/2 - teaspoon nutmeg
- - **********************
- - topping:
- 1 - cup flour
- 1 - cup butter
- 1 - cup brown sugar
- 1/2 - cup sweetened coconut
- 1 - cup chopped pecans
How To Make bonnie's sweet potato souffle

Step 1Butter a 13X9 inch baking dish.

Step 2Bake the sweet potatoes on a cookie sheet on foil. Pierce the skins with a fork at least three times. Bake at 400 for about one hour.

Step 3Cool for 10 minutes, then using a fork scrape the skin off the potatoes, cut them into chunks and put them in a large mixing bowl.

Step 4Add the butter, sugar, vanilla, orange extract, orange zest, the eggs, beaten, milk, salt, pepper and the nutmeg to the sweet potatoes. Mix well with a hand mixer on low speed, then beat on high speed until well mixed. Pour the mixture into the baking dish.

Step 5Pre-heat the oven to 350 degrees.

Step 6MAKE TOPPING: Melt the butter and add the flour, brown sugar, coconut and pecans, mix well. It will be crumbly.

Step 7Sprinkle the topping over the sweet potato mixture and bake at 350 degrees for 35 minutes.

Step 8Serve warm and Enjoy!
