This souffle is the ultimate sweet potato dish! Seasoned perfectly with a hint of orange and a terrific pecan coconut topping. Quite an impressive presentation for your holiday table! I am happy to share this recipe with my justapinch.com friends! Happy Holidays!

Ingredients

  • - souffle:
  • 6 - sweet potatoes
  • 6 - ounces butter
  • 1/2 - cup sugar
  • 2 - teaspoons vanilla
  • 1 - teaspoon orange extract
  • 1 - teaspoon orange zest
  • 4 - large eggs
  • 1 - cup 2% milk
  • 1 - teaspoon salt
  • 1 - teaspoon pepper
  • 1/2 - teaspoon nutmeg
  • - **********************
  • - topping:
  • 1 - cup flour
  • 1 - cup butter
  • 1 - cup brown sugar
  • 1/2 - cup sweetened coconut
  • 1 - cup chopped pecans

How To Make bonnie's sweet potato souffle

  • Step 1
    Butter a 13X9 inch baking dish.
  • Step 2
    Bake the sweet potatoes on a cookie sheet on foil. Pierce the skins with a fork at least three times. Bake at 400 for about one hour.
  • Step 3
    Cool for 10 minutes, then using a fork scrape the skin off the potatoes, cut them into chunks and put them in a large mixing bowl.
  • Step 4
    Add the butter, sugar, vanilla, orange extract, orange zest, the eggs, beaten, milk, salt, pepper and the nutmeg to the sweet potatoes. Mix well with a hand mixer on low speed, then beat on high speed until well mixed. Pour the mixture into the baking dish.
  • Step 5
    Pre-heat the oven to 350 degrees.
  • Step 6
    MAKE TOPPING: Melt the butter and add the flour, brown sugar, coconut and pecans, mix well. It will be crumbly.
  • Step 7
    Sprinkle the topping over the sweet potato mixture and bake at 350 degrees for 35 minutes.
