sweet potato "souffle"
This was the first sweet potato recipe I ever had that I liked - a cousin of my husband's served it for Thanksgiving, and this is the recipe she gave me. It's almost identical to a Paula Deen recipe so I'm posting a photo of hers until I get one of my own!

Ingredients
- 3 cups cooked, mashed sweet potatoes
- 1 cup sugar
- 2 - eggs
- 1 cup margarine, divided
- 1 teaspoon vanilla
- 1 cup brown sugar, light
- 3/4 cup crushed pecans
- 1/3 cup self rising flour
How To Make sweet potato "souffle"

Step 1Preheat oven to 350 degrees and grease large casserole dish.

Step 2Beat together potatoes, sugar, eggs, vanilla, and 1/2 cup margarine until smooth and fluffy. Spread in casserole and bake uncovered for 30 minutes.

Step 3Mix brown sugar, pecans, flour, and remaining 1/2 cup margarine with fork until crumbly.

Step 4When potatoes are done baking, add topping and return to oven for 10-15 minutes until brown and bubbly.
