This was the first sweet potato recipe I ever had that I liked - a cousin of my husband's served it for Thanksgiving, and this is the recipe she gave me. It's almost identical to a Paula Deen recipe so I'm posting a photo of hers until I get one of my own!

Ingredients

cooked, mashed sweet potatoes
1 c
sugar
2
eggs
1 c
margarine, divided
1 tsp
vanilla
1 c
brown sugar, light
3/4 c
crushed pecans
1/3 c
self rising flour

How to Make Sweet Potato "Souffle"

Step-by-Step

  • 1Preheat oven to 350 degrees and grease large casserole dish.
  • 2Beat together potatoes, sugar, eggs, vanilla, and 1/2 cup margarine until smooth and fluffy. Spread in casserole and bake uncovered for 30 minutes.
  • 3Mix brown sugar, pecans, flour, and remaining 1/2 cup margarine with fork until crumbly.
  • 4When potatoes are done baking, add topping and return to oven for 10-15 minutes until brown and bubbly.
