Sweet Potato Snacks

1 largesweet potato or yam, peeled and cut like french fries

1 largeegg,beaten

1/2 cgraham or vanilla wafer crumbs

1/3 ccornstarch
-
1/4 cbrown sugar
-
1/4 cgranulated sugar

1 tspcinnamon
-
1 tspvanilla extract
How to Make Sweet Potato Snacks
- Heat oven to 375^ and line a cookie sheet with foil or parchment paper heavily sprayed or greased. Set aside.
- In a large bowl, beat egg and vanilla and place potato sticks into the egg mixture and toss to coat evenly.
In another bowl, combine all the remaining ingredients. Place a small amount of wet potato sticks into the mixture and dredge evenly. - Place potato sticks on prepared pan and bake for 30 minutes, then turn over with pancake turner. Bake for another 10- 20 minutes.
Remove from oven and remove to serving platter with a spatula. Eat immediately, with or without a dusting of powdered sugar. - Note:
Instead of using fresh sweet potatoes. I used frozen and they worked great. Follow heating directions on bag for temperature-all other direction are the same. Use frozen stick type or waffle type I liked the waffle type best. Making sure to make enough mixture to accommodate the amount of potato pieces you are using.
Next time I will coat them more.
