sweet potato-raisin patties

I have been making this recipe for years! It's great for a side dish for holidays or just as an every day week night dish. Note* The original recipe called for using already cooked sweet potatoes. I am adding the time in to cook them in this recipe, as I feel that it helps in your time management. Depending upon the size of your sweet potatoes , especially if yours are a little larger than medium, please adjust your cooking time accordingly.

Ingredients

  • 4 medium sweet potatoes
  • 1 - egg
  • 1/2 teaspoon salt
  • 3 tablespoons flour, if needed
  • 1/2 cup raisins

How To Make sweet potato-raisin patties

  • Step 1
    Peel and cook the sweet potatoes in boiling water for about 50-60 minutes, or until done. Stick a fork into the potato and it is done if you can insert the fork easily into the potato.
  • Step 2
    Mash the sweet potatoes. Beat in the egg and salt. Add flour only if the potatoes are wet. Mix in raisins.
  • Step 3
    Drop mixture from a tablespoon on heated, greased frying pan. Brown slowly on both sides. Serve immediately.
