sweet potato-raisin patties

I have been making this recipe for years! It's great for a side dish for holidays or just as an every day week night dish. Note* The original recipe called for using already cooked sweet potatoes. I am adding the time in to cook them in this recipe, as I feel that it helps in your time management. Depending upon the size of your sweet potatoes , especially if yours are a little larger than medium, please adjust your cooking time accordingly.

Ingredients
- 4 medium sweet potatoes
- 1 - egg
- 1/2 teaspoon salt
- 3 tablespoons flour, if needed
- 1/2 cup raisins
How To Make sweet potato-raisin patties

Step 1Peel and cook the sweet potatoes in boiling water for about 50-60 minutes, or until done. Stick a fork into the potato and it is done if you can insert the fork easily into the potato.

Step 2Mash the sweet potatoes. Beat in the egg and salt. Add flour only if the potatoes are wet. Mix in raisins.

Step 3Drop mixture from a tablespoon on heated, greased frying pan. Brown slowly on both sides. Serve immediately.
