Now I love Sweet Potatoes and this would probably make a different way to serve these during the holidays!

Ingredients

8 medium yams
3 - eggs
1/2 cup light cream
2 tablespoons butter
3 tablespoons brown sugar
1/4 teaspoon cinnamon
16-20 large marshmallows
2 cups fine breadcrumbs
4 cups oil

How To Make sweet potato marshmallow croquettes

Step 1

Pare,dice and boil the yams to a soft mash.

Step 2

Stir in 1 egg,1/4 cup cream,the butter,sugar and cinnamon. Cool.
Step 3

Shape the potatoes around the marshmallows.
Step 4

Mix the eggs in the remaining cream. Dip the croquettes into cream, then dredge in breadcrumbs.
Step 5

Heat the oil to 375. Fry the croquettes until golden brown. Serve hot.
