Sweet Potato Latkes

I made these and they are delicious- my sweet tooth craving was satisfied!
2 largesweet potatoes, peeled and shredded
2 largeeggs, lightly beaten
1 Tbspbrown sugar
2 Tbspall purpose flour
2 tspground cloves
2 tspground cinnamon
2 Tbspvegetable oil for frying
2 Tbspbutter for frying
How to Make Sweet Potato Latkes
- Place shredded potatoes in a cheesecloth and squeeze as much of the liquid from them as possible. Let set for 10 minutes then squeeze again.
- In a large bowl, combine all ingredients and mix well.
Heat oil and butter in large heavy skillet to medium high heat(375^)
- Form mixture into pancake size patties and fry in heated pan. Turn over patties after 2 to 3 minutes-when bottom is browned; and brown on the other side. Drain on paper towels.
Serve hot with applesauce or butter, maple syrup or whipped cream.
