sweet potato latkes

Ingredients
- 2 large sweet potatoes, peeled and shredded
- 2 large eggs, lightly beaten
- 1 tablespoon brown sugar
- 2 tablespoons all purpose flour
- 2 teaspoons ground cloves
- 2 teaspoons ground cinnamon
- 2 tablespoons vegetable oil for frying
- 2 tablespoons butter for frying
How To Make sweet potato latkes

Step 1Place shredded potatoes in a cheesecloth and squeeze as much of the liquid from them as possible. Let set for 10 minutes then squeeze again.

Step 2In a large bowl, combine all ingredients and mix well. Heat oil and butter in large heavy skillet to medium high heat(375^)

Step 3Form mixture into pancake size patties and fry in heated pan. Turn over patties after 2 to 3 minutes-when bottom is browned; and brown on the other side. Drain on paper towels. Serve hot with applesauce or butter, maple syrup or whipped cream.
