Sweet Potato Latkes

These are so crunchy and delicious you will want to serve them as dessert and not as a side dish. These are also good as appetizers.

Pan Fry


2 large
sweet potatoes, peeled and shredded
2 large
eggs, lightly beaten
1 Tbsp
brown sugar
2 Tbsp
all purpose flour
2 tsp
ground cloves
2 tsp
ground cinnamon
2 Tbsp
vegetable oil for frying
2 Tbsp
butter for frying

How to Make Sweet Potato Latkes


  • 1Place shredded potatoes in a cheesecloth and squeeze as much of the liquid from them as possible. Let set for 10 minutes then squeeze again.
  • 2In a large bowl, combine all ingredients and mix well.
    Heat oil and butter in large heavy skillet to medium high heat(375^)
  • 3Form mixture into pancake size patties and fry in heated pan. Turn over patties after 2 to 3 minutes-when bottom is browned; and brown on the other side. Drain on paper towels.
    Serve hot with applesauce or butter, maple syrup or whipped cream.
