sweet potato cloud fluff

This is the BEST EVER. I get so many compliments on this. I had originally gotten a similar recipe from all recipes, but ended up making my own recipe and this is what turned up. My husband loves this at holidays, and is not a sweet tooth person at all. It's not overly sweet.

Ingredients
- 3 - sweet potatoes
- - a dash of vanilla extract
- 8-12 ounces heavy cream
- - salt to taste
- - sugar/splenda to taste
- - dash of nutmeg (optional)
- 1/4 cup butter
- - brown sugar to taste (optional)
How To Make sweet potato cloud fluff

Step 1Cook the sweet potatoes in the oven or microwave until thoroughly cooked and then peel off the skins and mash up until smooth.

Step 2Add heavy whipping cream and mix well until it's almost a fluffy texture.

Step 3Add a dash of vanilla (maybe half a teaspoon) and add tiny amount of salt and sugar until you get desired sweetness. Much less salt than sugar of course The salt is only to balance and compliment the sugar.

Step 4Add a little bit of nutmeg to taste if you wish.
