Ingredients

1 cchopped pecans
-
1 cbrown sugar, firmly packed

1/3 call purpose flour
-
1/2 stickbutter, melted and divided (see recipe instructions)

1/4 ccoconut, flaked

2 can(s)29 oz sweet potatoes, drained and mashed

3/4 cgranulated sugar
-
2eggs, cracked and whipped
-
1/2 cmilk
-
1 tspvanilla extract
-
1/2 tspsalt
How to Make Sweet Potato Casserole
- Preheat the oven to 350 degrees. Coat a 3qt casserole with cooking spray.
- Combine the chopped pecans, brown sugar, flour, coconut in a bowl. Add a 1/4 cut of the butter and mix to create the streusel topping and set aside
- Combine the remaining ingredients with the remaining 1/4 cup of butter and mix well. Spoon the potatoes into the casserole and sprinkle with pecan topping.
- Bake 45-50 minutes until heated through and pecan topping is golden brown. Enjoy!
