brown sugar, firmly packed
butter, melted and divided (see recipe instructions)
29 oz sweet potatoes, drained and mashed
eggs, cracked and whipped
How to Make Sweet Potato Casserole
1Preheat the oven to 350 degrees. Coat a 3qt casserole with cooking spray.
2Combine the chopped pecans, brown sugar, flour, coconut in a bowl. Add a 1/4 cut of the butter and mix to create the streusel topping and set aside
3Combine the remaining ingredients with the remaining 1/4 cup of butter and mix well. Spoon the potatoes into the casserole and sprinkle with pecan topping.
4Bake 45-50 minutes until heated through and pecan topping is golden brown. Enjoy!
