chopped pecans
1 c
brown sugar, firmly packed
1/3 c
all purpose flour
1/2 stick
butter, melted and divided (see recipe instructions)
1/4 c
coconut, flaked
2 can(s)
29 oz sweet potatoes, drained and mashed
3/4 c
granulated sugar
eggs, cracked and whipped
1/2 c
1 tsp
vanilla extract
1/2 tsp

How to Make Sweet Potato Casserole


  • 1Preheat the oven to 350 degrees. Coat a 3qt casserole with cooking spray.
  • 2Combine the chopped pecans, brown sugar, flour, coconut in a bowl. Add a 1/4 cut of the butter and mix to create the streusel topping and set aside
  • 3Combine the remaining ingredients with the remaining 1/4 cup of butter and mix well. Spoon the potatoes into the casserole and sprinkle with pecan topping.
  • 4Bake 45-50 minutes until heated through and pecan topping is golden brown. Enjoy!
