My Thanksgiving table isn't complete until this casserole is front and center..next to that big ole turkey of course!

Ingredients

  • 1 cup chopped pecans
  • 1 cup brown sugar, firmly packed
  • 1/3 cup all purpose flour
  • 1/2 stick butter, melted and divided (see recipe instructions)
  • 1/4 cup coconut, flaked
  • 2 cans 29 oz sweet potatoes, drained and mashed
  • 3/4 cup granulated sugar
  • 2 - eggs, cracked and whipped
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

How To Make sweet potato casserole

  • Step 1
    Preheat the oven to 350 degrees. Coat a 3qt casserole with cooking spray.
  • Step 2
    Combine the chopped pecans, brown sugar, flour, coconut in a bowl. Add a 1/4 cut of the butter and mix to create the streusel topping and set aside
  • Step 3
    Combine the remaining ingredients with the remaining 1/4 cup of butter and mix well. Spoon the potatoes into the casserole and sprinkle with pecan topping.
  • Step 4
    Bake 45-50 minutes until heated through and pecan topping is golden brown. Enjoy!
