My Thanksgiving table isn't complete until this casserole is front and center..next to that big ole turkey of course!

Ingredients

  • 1 c
    chopped pecans
  • 1 c
    brown sugar, firmly packed
  • 1/3 c
    all purpose flour
  • 1/2 stick
    butter, melted and divided (see recipe instructions)
  • 1/4 c
    coconut, flaked
  • 2 can(s)
    29 oz sweet potatoes, drained and mashed
  • 3/4 c
    granulated sugar
  • 2
    eggs, cracked and whipped
  • 1/2 c
    milk
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    salt

How to Make Sweet Potato Casserole

Step-by-Step

  1. Preheat the oven to 350 degrees. Coat a 3qt casserole with cooking spray.
  2. Combine the chopped pecans, brown sugar, flour, coconut in a bowl. Add a 1/4 cut of the butter and mix to create the streusel topping and set aside
  3. Combine the remaining ingredients with the remaining 1/4 cup of butter and mix well. Spoon the potatoes into the casserole and sprinkle with pecan topping.
  4. Bake 45-50 minutes until heated through and pecan topping is golden brown. Enjoy!
