A great recipe for sweet potatoes and a staple for our Thanksgiving table.

Ingredients

  • TOPPING:
  • 1/3 cup plain flour
  • 1/2 cup brown sugar
  • 1 cup pecans, chopped
  • 3/4 cup butter
  • 1/3 cup evaporated milk
  • CASSEROLE:
  • 3 cups sweet potatoes, baked, peeled, and mashed
  • 1 stick butter
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 - eggs, beaten
  • 3/4 cup sugar
  • 1/3 cup evaporated milk

How To Make sweet potato casserole

  • Step 1
    Topping: Mix brown sugar, milk, flour, butter and pecans together. Spread evenly on top of sweet potato mixture without disturbing mixture.
  • Step 2
    Casserole: Mash potatoes and combine with sugar, butter, eggs, vanilla, and milk. Place in a greased casserole dish. Spread topping on mixture. Bake at 350 degrees for one hour uncovered.
  • Step 3
    Variation: During the Christmas holidays, substitute eggnog for the milk in the casserole and topping.
  • Step 4
    Notes: Blend the sugar and room temperature margarine together first; then add the eggs, milk and vanilla flavoring. I grate a little nutmeg over the casserole. Add the potatoes last. With the topping, I cream the butter with the brown sugar, then add the flour and milk. I add the pecans last.
