Ingredients
- TOPPING:
- 1/3 cup plain flour
- 1/2 cup brown sugar
- 1 cup pecans, chopped
- 3/4 cup butter
- 1/3 cup evaporated milk
- CASSEROLE:
- 3 cups sweet potatoes, baked, peeled, and mashed
- 1 stick butter
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 - eggs, beaten
- 3/4 cup sugar
- 1/3 cup evaporated milk
How To Make sweet potato casserole

Step 1Topping: Mix brown sugar, milk, flour, butter and pecans together. Spread evenly on top of sweet potato mixture without disturbing mixture.

Step 2Casserole: Mash potatoes and combine with sugar, butter, eggs, vanilla, and milk. Place in a greased casserole dish. Spread topping on mixture. Bake at 350 degrees for one hour uncovered.

Step 3Variation: During the Christmas holidays, substitute eggnog for the milk in the casserole and topping.

Step 4Notes: Blend the sugar and room temperature margarine together first; then add the eggs, milk and vanilla flavoring. I grate a little nutmeg over the casserole. Add the potatoes last. With the topping, I cream the butter with the brown sugar, then add the flour and milk. I add the pecans last.
