I made too much pumpkin pie spice and it wasn't enough to keep in the cupboard. So I made this. My family was surprised to find pineapple in the casserole, but all agreed that it was a welcome surprise and asked to bring home leftovers.

Ingredients
- 5 pounds sweet potatoes, baked, peeled and mashed
- 1 can crushed pineapple, 15 oz.
- 1 stick butter (1/2 cup)
- 1/2 cup dark brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon sea salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- - miniature marshmallows
How To Make sweet potato casserole

Step 1Bake sweet potatoes in oven or microwave. When cool enough to handle, peel then mash them in a large mixing bowl.

Step 2Mix in all remaining ingredients except marshmallows. Spread mixture in to a well-greased 13X9X2-inch pan.

Step 3Top with marshmallows (they don't have to be mini) and bake 350F for 30 minutes. Emjoy!
