I made too much pumpkin pie spice and it wasn't enough to keep in the cupboard. So I made this.

My family was surprised to find pineapple in the casserole, but all agreed that it was a welcome surprise and asked to bring home leftovers.

Ingredients

  • 5 lb
    sweet potatoes, baked, peeled and mashed
  • 1 can(s)
    crushed pineapple, 15 oz.
  • 1 stick
    butter (1/2 cup)
  • 1/2 c
    dark brown sugar
  • 2 tsp
    ground cinnamon
  • 1 tsp
    sea salt
  • 1 tsp
    ground ginger
  • 1/2 tsp
    ground cloves
  • ·
    miniature marshmallows

How to Make Sweet Potato Casserole

Step-by-Step

  1. Bake sweet potatoes in oven or microwave. When cool enough to handle, peel then mash them in a large mixing bowl.
  2. Mix in all remaining ingredients except marshmallows. Spread mixture in to a well-greased 13X9X2-inch pan.
  3. Top with marshmallows (they don't have to be mini) and bake 350F for 30 minutes. Emjoy!
