sweet potato casserole

This is yet another of the wonderful treasures that are in the Mayo-Clinic cookbook. This is my kind of sweet potato! I do not like sugar or marshmallows on an already sweet potato. My favorite recipe yet of the ones I've used from this treasure book. A note: do not use dark orange sweet potatoes because they tend to become too mushy in this dish. Happy cooking!

Ingredients
- 5 - pale orange skinned sweet potaotes (3 lbs)
- 1/2 cup vegetable broth
- 4 - drops hot pepper sauce
- 1/2 teaspoon ground pepper
- 1 teaspoon dried thyme
How To Make sweet potato casserole

Step 1Preheat oven to 375. Meanwhile, peel and cut sweet potatoes into 1 inch chunks.

Step 2Place sweet potatoes into 2-qt baking dish. Stir in remaining ingredients.

Step 3Cover and bake for 20 minutes, then stir. Cover and continue baking until tender, 20-25min. longer.
