sweet potato casserole

This is a great recipe for those who generally don't like the usual sweet potatoes. My sons growing up would not eating sweet potatoes until I found this recipe. Now it's a requested dish at holiday dinners. Can also omit the nuts in the topping for those with nut allergies. Enjoy!

Ingredients
- 3 cups cooked sweet potatoes
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 1/2 cup sugar
- 2 - eggs
- 1/4 cup milk
- 2 tablespoons milk
- 1/2 cup brown sugar
- 1/4 cup flour
- 3 tablespoons butter
- 1/2 cup chopped pecans
How To Make sweet potato casserole

Step 1Beat sweet potatoes, 1/2cup melted butter, vanilla, 1/2cup, sugar, 2eggs,1/4cup milk, plus 2T. milk mix until all combined. Pour into 9x9 pan or pie pan. Here's an easy tip to cook sweet potatoes, cut in half and pierce. Cook in microwave 5 minutes for each half potato. Scoop out soft potatoes. I usually use 3 large potatoes.

Step 2To make the topping mix 1/2c. brown sugar, 1/4c. flour, 3T. butter and 1/2c. chopped pecans until crumbly. Cover the sweet potatoes with this mixture. Bake around 45 minutes until lightly browned.
