Ingredients

  • STREUSEL TOPPING
  • 1/4 cup flour
  • 1/2 cup light brown sugar
  • 1/3 cup pecans, chopped
  • 2 tablespoons butter, melted
  • SWEET POTATO
  • 3 cups cooked and mashed sweet potatoes (about 2 pounds)
  • 1 - egg
  • 1/3 cup 1% milk
  • 1/2 teaspoon salt
  • 1/4 cup maple syrup, grade b
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • 1 package fresh asparagus (small package)

How To Make sweet potato casserole

  • Step 1
    Preheat oven to 350. Spray a 2 quart casserole dish with non-stick baking spray and set aside. Cook asparagus and set aside.
  • Step 2
    Blend flour, brown sugar and pecans in a small bowl. Pour melted butter over the mixture and blend until moistened and crumbly. Set aside.
  • Step 3
    In a large bowl, beat the egg, milk salt, maple syrup, vanilla extract and melted butter. Add the sweet potato to the egg mixture and blend well.
  • Step 4
    Spread in casserole dish. Sprinkle topping over evenly. Garnish with pieces of cooked asparagus. Bake about 30 minutes or until lightly brown & heated.
