sweet potato casserole
This is one of my favorite holiday dishes. I make it every Thanksgiving and Christmas. Everyone seems to enjoy usually there's not a bite left in the pan.

Ingredients
- CASSEROLE
- 1 1/2 cans sweet potatoes
- 2 large eggs
- dash nutmeg
- 1 cup sugar
- 3/4 stick margarine
- dash cinnamon
- 3/4 cup cream
- dash salt
- TOPPING
- 1 cup corn flakes (crushed)
- 1/2 cup pecans
- 1/2 cup brown sugar, firmly packed
- 3/4 stick margarine
How To Make sweet potato casserole

Step 1Preheat oven to 400. Heat sweet potatoes then drain off juice and mash them with a potato masher. In a large bowl mix together eggs, sugar, cream, cinnamon, nutmeg, butter, and salt. Pour into a greased pan (9x11). Bake for 15 to 20 min. Take out potato mixture and add topping below. In another bowl mix together 3/4 stick butter and brown sugar mix well. Add corn flakes and nuts and stir until well coated. Put on top of the sweet potato mixture and bake for an additional 15 to 20 min. This dish will take the place of regular sweet potatoes and have them coming back for more.
