My husband never liked Thanksgiving types of food until he tasted my sweet potato casserole. He couldn't get enough. Can be made ahead and baked at the last minute.

Ingredients
- 3 cups mashed sweet potatoes (fresh or canned)
- 2 large eggs
- 1/4 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup milk
- 1 dash salt
- 1 teaspoon pure vanilla extract
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1 cup chopped pecans (may use walnuts)
- 1/4 cup butter
How To Make sweet potato casserole

Step 1Combine sweet potatoes, eggs, sugar milk, salt, 1/4 cup butter and vanilla. Spread in greased shallow casserole dish. Combine flour, brown sugar, and remaining 1/4 cup butter to make crumbs. Sprinkle on potato mixture. Sprinkle with chopped pecans. (May make to this point and refrigerate). Bake at 350f 45 minutes. If made ahead, bake 1 hour. Serve hot.
