My husband never liked Thanksgiving types of food until he tasted my sweet potato casserole. He couldn't get enough.
Can be made ahead and baked at the last minute.

Ingredients

  • 3 c
    mashed sweet potatoes (fresh or canned)
  • 2 large
    eggs
  • 1/4 c
    butter, softened
  • 1/2 c
    white sugar
  • 1/2 c
    milk
  • 1 dash(es)
    salt
  • 1 tsp
    pure vanilla extract
  • 1/2 c
    all purpose flour
  • 1/2 c
    brown sugar
  • 1 c
    chopped pecans (may use walnuts)
  • 1/4 c
    butter

How to Make Sweet Potato Casserole

Step-by-Step

  1. Combine sweet potatoes, eggs, sugar milk, salt, 1/4 cup butter and vanilla. Spread in greased shallow casserole dish. Combine flour, brown sugar, and remaining 1/4 cup butter to make crumbs. Sprinkle on potato mixture. Sprinkle with chopped pecans. (May make to this point and refrigerate). Bake at 350f 45 minutes. If made ahead, bake 1 hour. Serve hot.
