sweet potato casserole

This was originally introduced to our holiday menu by my sister and was an instant success, quickly to become a tradition at holiday meals. I submitted the recipe to a fund-raising group for a cookbook (with my sister's name on it - I promise it's true) but her name was left out when published and my name was on it as contributor. I bought the cookbooks for family members and when my sister saw her recipe with my name on it, needless to say my sister never let me live it down.

Ingredients
- 3-4 med. - sweet potatoes (or large can of yams)
- 1/2 cup butter or margerine, softened
- 1/2 cup sugar
- 1/3 cup milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 2 - eggs, well beaten
- TOPPING
- 1 cup pecans
- 1 teaspoon cinnamon
- 1/3 cup butter or margerine, melted
- 1 cup brown sugar
- 1/2 cup flour
How To Make sweet potato casserole

Step 1Boil sweet potatoes until tender enough to mash or drain large can of yams and mash until smooth.

Step 2Add softened butter, sugar, milk, vanilla, cinnamon and beaten eggs. Mix thoroughly.

Step 3Spray a casserole dish with non-stick spray and pour in mixture, smooth top flat.

Step 4In separate bowl, thoroughly mix pecans, cinnamon, melted butter, brown sugar and flour for topping. The mixture is very crumbly.

Step 5Crumble topping over sweet potato mixture.

Step 6Bake at 350º for 25-35 minutes.
