I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Oh so yummy, this sweet potato casserole is more like a dessert than side dish. The sweet potatoes are moist, soft, and just melt in your mouth. On top is a crumble made of coconut, chopped pecans, and brown sugar. It's sweet and crunchy. The flavor of the coconut and pecans pair nicely with the sweet potatoes. Ingredients

  • 3 c
    cold mashed sweet potatoes (yams out of can o.k. too)
  • 1/2 c
    sugar
  • 1/4 c
    milk
  • 1 tsp
    vanilla
  • 1/3 stick
    margarine, melted
  • 2
    eggs
  • TOPPING

  • 1/2 c
    coconut
  • 1/2 c
    chopped pecans
  • 1/3 stick
    margarine, melted
  • 1/3 c
    brown sugar, packed
  • 1 Tbsp
    all-purpose flour

How to Make Sweet Potato Casserole

Step-by-Step

  1. Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).
  2. Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.
  3. Pour sweet potatoes into the greased baking dish.
  4. Evenly sprinkle topping mixture over sweet potato mixture.
  5. Bake at 300 degrees for 45 minutes uncovered.
