I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Ingredients

3 c
cold mashed sweet potatoes (yams out of can o.k. too)
1/2 c
sugar
1/4 c
milk
1 tsp
vanilla
1/3 stick
margarine, melted
2
eggs
toppng:
1/2 c
coconut
1/2 c
chopped pecans
1/3 stick
margarine, melted
1/3 c
brown sugar, packed
1 Tbsp
flour

How to Make Sweet Potato Casserole

Step-by-Step

  • 1Mix sweet potatoes, sugar, milk, vanilla, melted margarine and eggs together with electric mixer.
  • 2Put in a greased 9x9" pan (glass o.k. too)
  • 3Mix topping ingredients ( coconut, pecans, melted margarine,brown sugar and flour) all together.
  • 4Evenly sprinkle topping mixture over potato mixture.
  • 5Bake at 300 degrees for 45 minutes uncovered.
