sweet potato casserole
I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Oh so yummy, this sweet potato casserole is more like a dessert than side dish. The sweet potatoes are moist, soft, and just melt in your mouth. On top is a crumble made of coconut, chopped pecans, and brown sugar. It's sweet and crunchy. The flavor of the coconut and pecans pair nicely with the sweet potatoes. We liked the addition of coconut to this topping. It adds a bit of wow factor to this easy dish.

Ingredients
- 3 cups cold mashed sweet potatoes (yams out of can o.k. too)
- 1/2 cup sugar
- 1/4 cup milk
- 1 teaspoon vanilla
- 1/3 stick margarine, melted
- 2 - eggs
- TOPPING
- 1/2 cup coconut
- 1/2 cup chopped pecans
- 1/3 stick margarine, melted
- 1/3 cup brown sugar, packed
- 1 tablespoon all-purpose flour
How To Make sweet potato casserole

Step 1Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).

Step 2Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.

Step 3Pour sweet potatoes into the greased baking dish.

Step 4Evenly sprinkle topping mixture over sweet potato mixture.

Step 5Bake at 300 degrees for 45 minutes uncovered.
