I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Oh so yummy, this sweet potato casserole is more like a dessert than side dish. The sweet potatoes are moist, soft, and just melt in your mouth. On top is a crumble made of coconut, chopped pecans, and brown sugar. It's sweet and crunchy. The flavor of the coconut and pecans pair nicely with the sweet potatoes. We liked the addition of coconut to this topping. It adds a bit of wow factor to this easy dish.

Ingredients

  • 3 cups cold mashed sweet potatoes (yams out of can o.k. too)
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1/3 stick margarine, melted
  • 2 - eggs
  • TOPPING
  • 1/2 cup coconut
  • 1/2 cup chopped pecans
  • 1/3 stick margarine, melted
  • 1/3 cup brown sugar, packed
  • 1 tablespoon all-purpose flour

How To Make sweet potato casserole

  • Sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs mixed together.
    Step 1
    Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).
  • Coconut, pecans, melted margarine, brown sugar, and flour mixed together.
    Step 2
    Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.
  • Sweet potato mixture poured into baking dish.
    Step 3
    Pour sweet potatoes into the greased baking dish.
  • Pecan coconut topping sprinkled on top.
    Step 4
    Evenly sprinkle topping mixture over sweet potato mixture.
  • Sweet Potato Casserole baking in the oven.
    Step 5
    Bake at 300 degrees for 45 minutes uncovered.
