I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Ingredients

  • 3 c
    cold mashed sweet potatoes (yams out of can o.k. too)
  • 1/2 c
    sugar
  • 1/4 c
    milk
  • 1 tsp
    vanilla
  • 1/3 stick
    margarine, melted
  • 2
    eggs
  • ·
    toppng:
  • 1/2 c
    coconut
  • 1/2 c
    chopped pecans
  • 1/3 stick
    margarine, melted
  • 1/3 c
    brown sugar, packed
  • 1 Tbsp
    flour

How to Make Sweet Potato Casserole

Step-by-Step

  1. Mix sweet potatoes, sugar, milk, vanilla, melted margarine and eggs together with electric mixer.
  2. Put in a greased 9x9" pan (glass o.k. too)
  3. Mix topping ingredients ( coconut, pecans, melted margarine,brown sugar and flour) all together.
  4. Evenly sprinkle topping mixture over potato mixture.
  5. Bake at 300 degrees for 45 minutes uncovered.
