sweet potato casserole

This recipe is my ex-husbands' Aunt Nora's. I started making it myself a several years ago and now it is requested at Thanksgiving and Christmas, even in my new life in a new state. While I don't have a picture right now, I will be sure and post one later.

Ingredients

  • POTATOES
  • 1 can sweet potatoes (29 oz) or 4-5 large baked sweet potatoes
  • 1/2 cup margarine
  • 2 - eggs, beaten
  • 1/3 cup canned milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • TOPPING
  • 1 cup packed brown sugar
  • 1/4 cup flour
  • 1/3 cup margarine
  • 1 cup pecans, chopped

How To Make sweet potato casserole

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    To make the potatoes, drain and mash the sweet potatoes.
  • Step 3
    Add the margarine, eggs, milk, sugar, and vanilla. Mix well and pour into a well-greased 9x12-inch glass pan.
  • Step 4
    To make the topping, mix the brown sugar and flour together in a medium bowl. Add the softened margarine, working with your fingers until crumbly.
  • Step 5
    Add pecans and mix until well blended. Spread evenly over the sweet potato mixture.
  • Step 6
    Bake for 35 minutes or until done.
