sweet potato cakes
I love regular potato cakes, so as I had some left over sweet potatoes recently I decided to try making sweet potato cakes. They turned out to be pretty good.

Ingredients
- 2 cups mashed sweet potatoes
- 1/2 cup sugar
- 1/2 stick margarine (softened)
- 1 large egg
- 1 pinch salt
- 1/4 cup self rising flour
- - spices to taste (cinnamon, nutmeg, etc.)
How To Make sweet potato cakes

Step 1Mix all ingredients together.

Step 2Form into small sized cakes

Step 3Cook in skillet, with a small amount of margarine or cooking oil, on top burner of stove, until lightly browned on both sides. Serve hot
