My family loves potatoes with breakfast dishes. This is a basic fried potato dish that has endless possibilities. Just add whatever sounds good and whatever you happen to have on hand.

- 2 - baking potatoes, cooked, cubed
- 2 tablespoons canola oil
- 1/2 tablespoon parmesan cheese, optional
- 2 teaspoons italian seasoning, optional

Step 1In a medium skillet, heat oil over medium heat..

Step 2Add cubed potatoes to the skillet in an even layer. Pan fry in the oil for a few minutes or until the potatoes start to brown. Stir occasionally to brown each side.

Step 3NOTE: Depending what I'm serving these with, I add onions, peppers, cheese, seasonings etc.
