stuffed baked potatoes
Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my mother, Betty.

Ingredients
- 8 medium potatoes, uniform in shape and size
- 1 - egg
- 1 cup sour cream
- 2 tablespoons chives, dried, frozen or fresh
- - salt to taste
- 1 cup shredded cheddar cheese
- - paprika
How To Make stuffed baked potatoes

Step 1Scrub and dry potatoes. Bake potatoes in 350°F. oven for 1 hour or until done.

Step 2Cut potatoes in half lengthwise and scoop out inside, keeping potato skins intact.

Step 3With mixer, whip potatoes and sour cream.

Step 4Add egg, chives and salt to taste. Let cool.

Step 5Mix in cheddar cheese. Fill halves with potato mixture and sprinkle with paprika.

Step 6Bake at 350°F. for 20 minutes or put in plastic freezer bags and freeze for later use.
