spicy oven fries
We love homemade French fries, and we like them baked. I have been kicking up the flavor on oven fries for quite some time. I think it all started when I was a teenager. When my girlfriend and I would go to Frisch's Big Boy and get their fries. I always doused mine with black pepper, even put the pepper in my puddle of ketchup. All the amounts are to taste and need, so feel free to add or subtract any amount you prefer. Enjoy!

Ingredients
- 2-3 - med.- lg. baking potatoes
- abt 1/4 teaspoon garlic powder, paprika, cayenne powder. amt's are aprox. or to taste
- - fresh ground black pepper, to taste.
- 2 tablespoons olive oil, or your favorite oil.
How To Make spicy oven fries

Step 1Preheat oven to 400 ^F. Line a baking sheet with parchment paper.

Step 2Scrub potatoes and peel (or leave peel on if you like). Slice long, fairly thick slabs of potato. Slice slabs into thick strips, or your preferred thickness.

Step 3Place potato strips into a bowl, thoroughly rinse off potato strips. At this point potatoes can be patted dry and readied for baking, or soaked in cold water until ready to bake.

Step 4If baking right away, French fries will be crispy and chewy. If soaked and baked later they will be tender inside and crispy on the outside. Your choice.

Step 5After patting French fries dry with paper towels, place back in bowl and drizzle with oil. Toss fries making sure all are coated with the oil.

Step 6Lay French fries on parchment lined baking sheet, in rows.

Step 7For applying the seasonings, I like to put them in my hand, individually. Then pinch the spices with the other hand and sprinkle spices evenly over the fries. This way, I don't over do it with a heavy hand.

Step 8Place baking sheet with French fries into preheated oven and bake until golden brown. Abt. 45 min.
