So creamy and smooth, these oven-baked mashed potatoes will be a great addition to your next holiday meal. The sour cream and white cheddar give these potatoes a distinct and great flavor. Decadent and delish!

Ingredients For special occasion baked mashed potatoes
4 lbpotatoes, baked, then mashed
1 1/2 cminced shallots
3 cgrated white cheddar (divided in half)
3 csour cream
1 Tbspsalt (use more or less to taste)
1/4 tspground white pepper

Test Kitchen Tips
We baked our potatoes at 400 F for 45min - 1 hour until fork tender. Let them cool, peeled the skin off, and then mashed.
1Mix the potatoes, shallots, and cheese in a large mixing bowl until well mixed. Season with salt and pepper. Fold in the sour cream one cup at a time.
2Oil a large baking dish (13 X 9 or larger pan will do) very well. Place the potato mixture in the pan and sprinkle the top with the reserved cheddar cheese.
3Bake in a 350 oven for 25 minutes until hot and lightly browned.
