How to Make "Special" Mashed Potatoes
- Preheat oven to 350. Meanwhile, peel and cube potatoes. Boil until tender enough to stick a fork in. While those are boiling, fry bacon and crumble.
- Drain potatoes and empty into a bowl. Mash and fluff with a fork. Add cream cheese, butter, and sour cream. Stir until blended. Add chives, 1 cup cheese, bacon, salt, and pepper. Stir/
- Place in a baking dish (I used a round cake pan). Top with rest of cheese and bake uncovered for about 30 minutes.
