"special" mashed potatoes

I just made these tonight for my first time and they are AMAZING!!

Ingredients

  • 5 medium potatoes
  • 5 slices bacon
  • 4 ounces cream cheese, room temp
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/8 cup chives
  • 1 1/2 cups cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

How To Make "special" mashed potatoes

  • Step 1
    Preheat oven to 350. Meanwhile, peel and cube potatoes. Boil until tender enough to stick a fork in. While those are boiling, fry bacon and crumble.
  • Step 2
    Drain potatoes and empty into a bowl. Mash and fluff with a fork. Add cream cheese, butter, and sour cream. Stir until blended. Add chives, 1 cup cheese, bacon, salt, and pepper. Stir/
  • Step 3
    Place in a baking dish (I used a round cake pan). Top with rest of cheese and bake uncovered for about 30 minutes.
