Ingredients
- 5 medium potatoes
- 5 slices bacon
- 4 ounces cream cheese, room temp
- 1/4 cup butter
- 1/2 cup sour cream
- 1/8 cup chives
- 1 1/2 cups cheddar cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make "special" mashed potatoes

Step 1Preheat oven to 350. Meanwhile, peel and cube potatoes. Boil until tender enough to stick a fork in. While those are boiling, fry bacon and crumble.

Step 2Drain potatoes and empty into a bowl. Mash and fluff with a fork. Add cream cheese, butter, and sour cream. Stir until blended. Add chives, 1 cup cheese, bacon, salt, and pepper. Stir/

Step 3Place in a baking dish (I used a round cake pan). Top with rest of cheese and bake uncovered for about 30 minutes.
