spanish potato omelette

This recipe is very dear to my heart, as I remember watching my mom make this...by the way, she is alive and well...course she probably thinks I wasn't paying attention....the only ingredient I added was half and half to make it thicker.

Ingredients

  • 8 - eggs
  • 2 - potatoes, peeled & sliced thin
  • 1/2 cup onion, thinly sliced
  • 1/2 cup green peppers, thinly sliced
  • 1 cup half and half
  • - salt and pepper to taste
  • 2 tablespoons olive oil

How To Make spanish potato omelette

  • Step 1
    In a large pot of salted boiling water..place the thin sliced potatoes for about a couple of mins... just till they lose their firmness...not all the way otherwise they will fall apart.
  • Step 2
    meanwhile in a deep skillet, add 2 tablespoons of olive oil, saute the thin sliced onions & peppers, for a few mins.. till semi-soft
  • Step 3
    scramble the 8 eggs along with the cup of half & half....till very well blended, gently pour on top of the sauteed onions & peppers, drain the potatoes and gently add on top...cook on low till eggs set...then the tricky part....cover with a large plate and turn over...put back in skillet and finish cooking for another 5 mins...
