I love trying to incorporate sweet potatoes in my diet because they have so many health benefits. They help save your eyesight, lift your mood, combat cancer and strengthen bones. Benefits aside, they're also very delicious in this simple, quick, oven-baked recipe inspired by Country Living magazine.

Ingredients
- 2 - medium size sweet potatoes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cayenne pepper
- 1 tablespoon canola oil
How To Make southwestern oven fried sweet potatoes

Step 1Pre heat oven to 400 degrees. Partially peel the potatoes. I like to get rid of the hairy, unappetizing parts of the skin and leave the rest on.

Step 2Cut each potato in half lenghthwise, and cut each half into 6 wedges. In large bowl, combine the cut potatoes, oil and spice mixture. Toss until potatoes are evenly coated. (I use my hands and get messy)

Step 3On foil lined baking sheet (easy clean up) arrange potatoes in single layer and place in middle rack of pre-heated oven. Bake 30 minutes or until edges are crisp and potatoes are cooked through. Serve with guacamole or your favorite dip.
