southern fried potatoes
This is the way my Grams fried potatoes for Grampa every single morning. And he had them with bacon and eggs! His cholesterol was practically non-existent. Conversely, she ate like a bird and her levels were sky high. I don't consider this so much of a recipe than a method of cooking them, as the ingredients don't have to be exact, and you can make additions once they are cooked, such as cooked leftover vegetables or meats. You can use butter or oil rather than bacon grease, you can add more onions or less, etc. They are so delicious, and can be served with any meal, not just breakfast!

Ingredients
- 1/3 - 1/2 cup bacon grease (or oil or butter or combination)
- 4 - 5 potatoes, peeled and diced
- 1 medium sweet onion, chopped
- salt and pepper to taste
How To Make southern fried potatoes

Step 1Melt grease over medium-high heat in a large skillet with a lid. Add potatoes and onions, season with salt and pepper and stir to coat with the oil.

Step 2Place the lid on the skillet and let them cook for 10 minutes. Don't lift the lid or stir.

Step 3After 10 minutes, remove the lid and using a spatula, give them a turn. They will have begun browning nicely! Now just keep cooking them, stirring them occasionally, until crispy and cooked through. Add other ingredients now, if desired. Taste and adjust seasoning if necessary. Serve and enjoy!
