sour cream potato salad

Mmmmmmmmm! A little different from your regular potato salad, but still yummy!!!!

Ingredients

  • DRESSING:
  • 4 large hard boiled egg yolks (whites reserved for salad)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup vinegar
  • 1 teaspoon prepared mustard
  • POTATO SALAD:
  • 7 cups cooked potatoes, diced
  • 1/2 cup green onions, chopped (both greens & whites)
  • 1 teaspoon celery seed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 large hard boiled eggs (+ the 4 egg whites reserved from dressing)
  • 1 medium cucumber, sliced

How To Make sour cream potato salad

  • Step 1
    MAKE DRESSING: Mash hard boiled yolks. Add sour cream, mayo, vinegar & mustard. Mix well. Refrigerate until needed.
  • Step 2
    SALAD: Combine potatoes, onions, celery seed, salt & pepper; toss lightly. Seperate whites of eggs from yolks, reserving yolks for dressing; chop whites & add to potato mixture. Chill for 1 hour.
  • Step 3
    Pour dressing over potatoes. Toss lightly. Chill thoroughly. Just before serving, garnish with sliced cucumber. Flavor improves the second day.
