Sour Cream Potato Pie

    instant mashed potatoes
  • 1
    egg, beaten
  • 1 large
    scallion, chopped
  • 1 c
    sour cream
  • ·
  • ·
  • 2 c
    corn flakes, crushed
  • 1/2 stick
    butter, melted
  • ·
    onion salt

How to Make Sour Cream Potato Pie


  1. Preheat oven to 350 degrees F.
  2. Combine egg, scallion, sour cream, salt and pepper.
  3. Make instant potatoes according to package directions, EXCEPT omit the milk; instead, add the sour cream mixture.
  4. Spread in baking pan.
  5. Toss corn flakes with butter and onion salt, to taste; spoon on top of potato mixture.
  6. Bake for about 20 minutes, or until the crumbs begin to brown.
