This is another "copycat" recipe from the cooks at Sterlington Hospital when I worked there. This was a sure way to get all of us to break our diets.

Ingredients

red potatoes
1 stick
margarine
4 oz
pimento peppers, drained
8 oz
sour cream
8 oz
cheddar cheese, shredded

How to Make Sour Cream Potato Casserole

Step-by-Step

  • 1Peel the potatoes and slice them thinly. Parboil them. Drain.
  • 2Layer in a casserole dish in the order listed above. Make two layers.
  • 3Make sure the cheese is on the top layer. Bake in 325 degree oven for one hour.
