This is another "copycat" recipe from the cooks at Sterlington Hospital when I worked there. This was a sure way to get all of us to break our diets.

Ingredients
- 8 - red potatoes
- 1 stick margarine
- 4 ounces pimento peppers, drained
- 8 ounces sour cream
- 8 ounces cheddar cheese, shredded
How To Make sour cream potato casserole

Step 1Peel the potatoes and slice them thinly. Parboil them. Drain.

Step 2Layer in a casserole dish in the order listed above. Make two layers.

Step 3Make sure the cheese is on the top layer. Bake in 325 degree oven for one hour.
