Ingredients

  • 6 c
    red potatoes -- skinned and cubed
  • 4 to 5 medium
    scallions -- diced
  • 1/4 c
    fresh chives -- diced
  • 3/4 c
    dill pickle -- diced
  • 5 medium
    eggs -- boiled, peeled, and chopped
  • 1/2 c
    sour cream
  • 1/2 c
    miracle whip
  • 1 1/2 Tbsp
    horseradish mustard
  • 1 Tbsp
    lemon juice
  • as needed
    paprika -- sprinkle over top of salad

How to Make Sour Cream & Chives Potato Salad

Step-by-Step

  1. Place the potatoes in a pot and boil over medium high heat for 15 minutes or until tender.
  2. Drain the water off the potatoes and place them in a large salad bowl.
  3. You will then want to take a potato masher and mash until smooth.
  4. Ad the rest of the ingredients and mix until well blended and smooth.
