Ingredients
- 6 cups red potatoes -- skinned and cubed
- 4 to 5 medium scallions -- diced
- 1/4 cup fresh chives -- diced
- 3/4 cup dill pickle -- diced
- 5 medium eggs -- boiled, peeled, and chopped
- 1/2 cup sour cream
- 1/2 cup miracle whip
- 1 1/2 tablespoons horseradish mustard
- 1 tablespoon lemon juice
- as needed - paprika -- sprinkle over top of salad
How To Make sour cream & chives potato salad

Step 1Place the potatoes in a pot and boil over medium high heat for 15 minutes or until tender.

Step 2Drain the water off the potatoes and place them in a large salad bowl.

Step 3You will then want to take a potato masher and mash until smooth.

Step 4Ad the rest of the ingredients and mix until well blended and smooth.
