Ingredients

  • 6 cups red potatoes -- skinned and cubed
  • 4 to 5 medium scallions -- diced
  • 1/4 cup fresh chives -- diced
  • 3/4 cup dill pickle -- diced
  • 5 medium eggs -- boiled, peeled, and chopped
  • 1/2 cup sour cream
  • 1/2 cup miracle whip
  • 1 1/2 tablespoons horseradish mustard
  • 1 tablespoon lemon juice
  • as needed - paprika -- sprinkle over top of salad

How To Make sour cream & chives potato salad

  • Step 1
    Place the potatoes in a pot and boil over medium high heat for 15 minutes or until tender.
  • Step 2
    Drain the water off the potatoes and place them in a large salad bowl.
  • Step 3
    You will then want to take a potato masher and mash until smooth.
  • Step 4
    Ad the rest of the ingredients and mix until well blended and smooth.
