How to Make Smashed Potatoes Part Deux (AKA: Potato Pancakes)

Step-by-Step

  1. In a large skillet bring a light layer of oil to hot over med-high heat
  2. This recipe easily doubles! Super easy and can feed a lot of people.
  3. mix all ingredients together (add a little flour if the mixture is too wet, it should hold together well but not be dry) Using a lg cookie scoop or a spoon scoop into hot skillet (leaving room in between don't crowd the pan) when the bottom is golden flip and press flat with a pancake turner then when they are golden remove to a paper towel to drain and serve hot with any toppings you like.
