smashed potatoes, my way
Found a recipe here on JAP, that sounded good. Of course I altered it to my preferences! LOL Little did I know when I sent hubby for garlic powder, he came back with garlic salt...so my potatoes while perfect for me since I like garlic, were too garlicy for him. I cut back down on the garlic for him...But if you use garlic powder, or like garlic, my amounts I used last night 10-7-22, are in () after the ingredients listed!

Ingredients
- 2 1/2 pounds red and white small potaoes
- 6 tablespoons vegetable oil
- 2 teaspoons garlic salt with parsley (lauery's brand)(i used 3 teaspoons and would do so with garlic powder)
- 3 teaspoons onion powder
- 4 twists from grinder of pink sea salt (i used 8)
- 4 twists from grinder of black pepper
- TOPPING INGREDIENTS
- 1 teaspoon garlic salt with parsley (lauery's brand)(i used 3, and would do if using garlic powder)
- 3 teaspoons onion powder
- 6 teaspoons grated parmesan cheese (less if using shredded)
- 6 tablespoons parsley
- 4 twists from grinder of pink sea salt (i used 10)
- 4 twists from grinder of black pepper (i used 8)
How To Make smashed potatoes, my way

Step 1Put potatoes in a pan with cold water to cover. Put on stove and bring to boil, until just fork tender (took 30 min).

Step 2Put potatoes in colander in sink, I ran some cold water on them so that I could handle them. Then put in a bowl with the other non topping ingredients, and stir to coat.

Step 3Put onto a large baking pan with sides, on a piece of parchment paper. Separate them enough to slightly mash with a potato masher or you could use a fork. You don't want them all the way to mushy...

Step 4Bake in a preheated 400 degree oven for 30 min or until they are crispy bottomed and a little browned on the top. Then sprinkle the mixture of the topping ingredients on top.

Step 5Note: Christmas day 2022, I made these and sweet potato casserole and green bean casserole. They cooked at 350 degrees, so I baked these potatoes 35 minutes at 350 degrees.

Step 6In Jan 2023, I made these in NC. Dad said he uses a meat mallet (flat side) to smash them, wo we did it that way, and they were more crispy. I now need to look for a meat mallet! LOL
