Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion
- 3 pounds Yukon Gold potatoes, cut into bite-sized pieces
- 1 1/2 pounds smoked sausage, cut into 1/3 inch round
- 1 pound fresh green beans, cut into 1-inch segments
- 1/2 cup butter
- 1/2 teaspoon wood-fired garlic powder
- 1 tablespoon Cajun or Creole seasoning
- 1/2 teaspoon freshly ground black pepper
- salt, to taste
How To Make slow cooker swamp potatoes

Step 1Heat the olive oil in a medium skillet. Add the onion and cook until soft, stirring frequently.

Step 2Add the potatoes to a Crock Pot and sprinkle with a teaspoon of Creole seasoning. Add the sauteed onions and sprinkle with another teaspoon of Creole seasoning.

Step 3Add the smoked sausage, green beans, butter, and remaining Creole seasoning, wood-fired garlic powder, and freshly ground black pepper.

Step 4Cook on low for 6 hours or high for 4 hours or until the potatoes and green beans are tender.
