Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 3 pounds Yukon Gold potatoes, cut into bite-sized pieces
  • 1 1/2 pounds smoked sausage, cut into 1/3 inch round
  • 1 pound fresh green beans, cut into 1-inch segments
  • 1/2 cup butter
  • 1/2 teaspoon wood-fired garlic powder
  • 1 tablespoon Cajun or Creole seasoning
  • 1/2 teaspoon freshly ground black pepper
  • salt, to taste

How To Make slow cooker swamp potatoes

  • Step 1
    Heat the olive oil in a medium skillet. Add the onion and cook until soft, stirring frequently.
  • Step 2
    Add the potatoes to a Crock Pot and sprinkle with a teaspoon of Creole seasoning. Add the sauteed onions and sprinkle with another teaspoon of Creole seasoning.
  • Step 3
    Add the smoked sausage, green beans, butter, and remaining Creole seasoning, wood-fired garlic powder, and freshly ground black pepper.
  • Step 4
    Cook on low for 6 hours or high for 4 hours or until the potatoes and green beans are tender.
