Paper thin sliced potatoes in a green onion and cheese, cream sauce. Baked til tender. Made with low fat ingredients. This is an easy potato sidedish with lots of creamy, cheesy flavor! I came up with this as a need for a tasty but low fat potato side dish.

Ingredients

  • 4 - large potatoes - washed, peeled and sliced very thin
  • 4 ounces low fat cream cheese
  • 8 ounces fat free half n' half
  • 3/4 cup low fat, low sodium chickem broth
  • 1/2 cup fresh grated parmesan cheese
  • 2 - green onions( white and green parts) chopped fine
  • 2 teaspoons kosher salt
  • 1 teaspoon bacon salt

How To Make skinny potatoes

  • Step 1
    Pre-heat oven to 400*
  • Step 2
    Thoroughly butter a 13"x9" casserole dish.
  • Step 3
    Layer the potatoes evenly in the bottom of the casserole dish.
  • Step 4
    In a separate microwave safe bowl, mix together the remaining ingredients.
  • Step 5
    Microwave on high for 60 seconds. Stir well and pour evenly over the potatoes.
  • Step 6
    Bake uncovered on the middle rack for 40 minutes. Remove from oven, cover and let sit for 15 minutes. Garnish with more chopped green onions if desired. Serve warm.
