Paper thin sliced potatoes in a green onion and cheese, cream sauce. Baked til tender. Made with low fat ingredients. This is an easy potato sidedish with lots of creamy, cheesy flavor! I came up with this as a need for a tasty but low fat potato side dish.

Ingredients
- 4 - large potatoes - washed, peeled and sliced very thin
- 4 ounces low fat cream cheese
- 8 ounces fat free half n' half
- 3/4 cup low fat, low sodium chickem broth
- 1/2 cup fresh grated parmesan cheese
- 2 - green onions( white and green parts) chopped fine
- 2 teaspoons kosher salt
- 1 teaspoon bacon salt
How To Make skinny potatoes

Step 1Pre-heat oven to 400*

Step 2Thoroughly butter a 13"x9" casserole dish.

Step 3Layer the potatoes evenly in the bottom of the casserole dish.

Step 4In a separate microwave safe bowl, mix together the remaining ingredients.

Step 5Microwave on high for 60 seconds. Stir well and pour evenly over the potatoes.

Step 6Bake uncovered on the middle rack for 40 minutes. Remove from oven, cover and let sit for 15 minutes. Garnish with more chopped green onions if desired. Serve warm.
