Ingredients

  • 1/2 pound ground italian sausage, any flavor
  • 1 medium onion, finely chopped
  • 1 pound red potatoes,sliced thin, about 5 or 6
  • 1/2 cup vegetable stock
  • 1 1/2 teaspoons roasted garlic and herb seasoning
  • 1/2 teaspoon each black pepper and oregano
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese

How To Make skillet baked italian potatoes

  • Step 1
    Heat oven to 400^ Heat a large Cast Iron skillet then add the sausage; cook and scramble until brown. Remove sausage with a slotted spoon to paper towel lined plate to drain; set aside. To the same skillet add the onion and cook until soft. Add the potatoes. Cook and stir gently about 2 to 3 minutes.
  • Step 2
    Mix the vegetable stock, seasoning, pepper, oregano, tomato sauce and sausage in a large bowl..Stir to combine. Pour this mixture over the potatoes in the skillet. Bring to a boil, then cover. Place in the pre-heated oven for 25 to 30 minutes .Until potatoes are tender.
  • Step 3
    Uncover skillet and stir gently. Sprinkle with the cheese.. and return to oven. Bake 1 minute longer or until cheese is melted and potatoes are browned a little. Let cool 10 minutes before serving.
