shirley's sweet potato casserole

My uncle's wife, Shirley, won our hearts with this recipe since she married into our family in 1972. We always ask for this special dish at Christmas. I was lucky enought to "steal" the recipe a couple of years ago. We have always enjoyed this recipe.

Ingredients

  • 3 cups sweet potatoes, peeled, cooked and mashed
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/3 stick butter or margarine, melted
  • 1/2 cup milk
  • 1 tablespoon butter flavoring
  • 1 tablespoon pure vanilla extract or sherry extract
  • 2 large eggs, beaten
  • TOPPING
  • 1 cup brown sugar
  • 5 tablespoons self-rising flour, sifted
  • 1/3 stick butter or margarine, melted
  • 1 cup chopped pecans

How To Make shirley's sweet potato casserole

  • Step 1
    Preheat oven to 350 degrees. Grease a 9 x 13 inch dish. Combine the ingredents for the casserole as listed. Spread in pan.
  • Step 2
    Combine topping ingredients. Sprinkle over casserole. Bake for 30 to 35 minutes or until golden brown and bubbly.
