My grandmother used to make this pie on the weekends when I was little.

Ingredients

  • 2 pounds red potatoes
  • 1 tablespoon butter, melted
  • 1/2 pound bacon
  • 4 ounces grated gruyere cheese
  • to taste - salt and pepper

How To Make scottish potato pie

  • Step 1
    Preheat oven to 425 degrees.
  • Step 2
    Butter a 9 inch pie dish.
  • Step 3
    Arrange the bacon slices on the bottom and sides of the dish. Make sure some of the slices overhang the edges of the dish slightly.
  • Step 4
    Peel and thinly slice the potatoes.
  • Step 5
    Rinse the potato slices and dry completely.
  • Step 6
    Place 1/3 of the potato slices over the bacon in the dish.
  • Step 7
    Sprinkle 1/3 of the cheese ove the potatoes.
  • Step 8
    Sprinkle with salt and pepper to taste.
  • Step 9
    Repeat these layers twice more.
  • Step 10
    Fold the overhanging bacon on the top
  • Step 11
    Place in the oven and bake for 50 minutes or until done. You can check by piercing the potatoes with a fork to see if they are tender.
  • Step 12
    Let stand 2 minutes before slicing.
