salt roasted potatoes

I really like the ease of preparation and of course the tastiness of these spuds. I'm sure you could add a variety of spices to this simple recipe but I like them with just the kosher salt.

Ingredients

  • 2 tablespoons olive oil (preferably extra-virgin)
  • 1/2 teaspoon kosher salt
  • 1/2 pound small (1 1/2-inch) white or yukon gold potatoes (about 5), scrubbed well, cut in half

How To Make salt roasted potatoes

  • Step 1
    Preheat oven to 425°F.
  • Step 2
    Stir together oil and salt in a small shallow baking dish or pie plate. Add potatoes and rub with oil mixture to coat.
  • Step 3
    Roast potatoes in middle of oven until tender when pierced with a sharp paring knife, 30 to 35 minutes. Stir occasionally.
