salt potatoes

Being from upstate NY these are a regional dish, They sell them in large bags with the salt included. However here in Maine no one has ever heard of them so I use small "gourmet" potatoes and add the salt. They are wonderful and NOT overly salty. dip in melted butter and mmmm!!!

Ingredients

  • 4 pounds small bite size new potatoes
  • 1 1/2 cups fine salt
  • - melted butter for dipping

How To Make salt potatoes

  • Step 1
    Mix salt and enough water to cover potatoes in a large pot, stir salt to dissolve, add potatoes, bring to a boil and cook for about 15-20 minutes or until potatoes are tender, drain and serve with melted butter
  • Step 2
    ........ after removing from the water the potatoes will have a light dusting of brine on them, I pour about 1/2 cup of melted butter over mine (depends on how many you make) and to your taste, or you can serve with small individual size custard bowls of melted butter and let each person dip there own.
